Sweet potato salad

When you think of a side dish made of potatoes, what comes to mind first? Fries, wedges, baked potatoes, the same old, right? It seems that every time we prepare a meal, we lack something exciting, creamy, juicy and moreover, healthy on the side. 

Today I want to share with you a recipe I came up with last year as my highlight dish of summer – creamy sweet potato salad. A mash of sweet and salty flavors in a rich and delicious dressing, will definitely enlighten your menu! Bright, colorful and nutritious, plus I love the fact everything is ready from start to finish in less than 30 minutes. 

I’ve tried a few different versions of sweet potato salad before, but it seemed like there was always something missing. It wasn’t until I defined the exact ratio of ingredients that I was truly happy with the final taste…and voilaaa, it’s here!

If you are looking for a healthy side dish, or just a refreshing, quick meal to reduce the heat, this is sweet potato salad is definitely your recipe! 

  • INGREDIENTS

    • 4 medium sweet potatoes (about 2 ½ pounds), peeled and coarsely chopped
    • 2 tbsp. olive oil
    • 2 tbsp. red wine vinegar
    • 4 hard-boiled eggs, peeled and chopped
    • ¼ cup bottled whole sweet picante peppers, chopped
    • 3 green onions, sliced (½ cup)
    • ¼ cup chopped fresh dill
    • ⅓ cup mayonnaise 
    • ⅓ cup plain greek yogurt
    • Salt and ground black pepper (to taste)
  • DIRECTIONS

    Preheat oven to 400 degrees F. In a large bowl combine potatoes and oil. Season with salt, and pepper. Place on baking sheet lined with baking paper and roast for 18 minutes or until just tender but still hold their shape. Leave on side to cool.

    Place potatoes in a large bowl. Drizzle with vinegar; stir to coat. Cool completely. Add eggs, peppers, green onions, and dill. In a small bowl combine mayonnaise and yogurt. 

    Toss sweet potato salad with dressing before serving. Refrigerate up to 24 hours.

    When serving, sprinkle dill on top for a green and orange colorful combo.
