• 12 rosemary crackers
• ½ cup mascarpone cheese
• Zest of 1 lemon
• Kosher salt and freshly ground black pepper, to taste
• ¼ cup red hot pepper jam
• 12 slices smoked salmon
• 2 tablespoons fresh dill, finely chopped

1. Prepare the Mascarpone Cream: In a small bowl, mix mascarpone cheese with lemon zest, a pinch of kosher salt, and freshly ground black pepper. Stir until smooth and well-combined.
2. Assemble the Crackers:
   Spread a small spoonful of red hot pepper jam over each rosemary cracker.
   Add a dollop of the prepared mascarpone cream on top of the jam.
   Place a slice of smoked salmon on top of the mascarpone.
3. Finish with Dill: Sprinkle a pinch of finely chopped dill on each cracker for a fresh, aromatic touch.
4. Serve: Arrange the crackers on a serving platter and serve immediately for the best texture and flavor.

Tip: If preparing ahead of time, assemble just before serving to keep the crackers crisp.
