Oven roasted vegetables

Clean eating is the best way to stay lean and fit. Throwing out all that processed junk food is the first step to a healthy body and mind. Trust me, if you follow this regime, you will definitely start to see serious results in a month or so.

In order to stay obedient and ditch the in-between-meal-snacks, meal prepping is the way to go. Prepare breakfast, lunch and a little snack a day in advance and pack them in plastic boxes to eat on-the-go. This is so simple, I don’t get why people make such a hassle over prepping foods the day before.

Start out with my recipe for oven roasted vegetables with a mouthwatering hummus dressing. I’m loving this light and healthy recipe of mine, quick, easy and very tasty! The combo of baked veggies, crunchy arugula and hummus with the zesty cilantro is sensational!

Don’t let your busy schedule prevent you from clean eating, instead make meal prepping a ‘must’ on your daily ‘to do list’.

  • INGREDIENTS

    Vegetables

    • ¼ lb. mushrooms, cubed
    • ¼ lb. yellow zucchini, cubed
    • ¼ lb. green zucchini, cubed
    • ¼ lb. eggplant, cubed
    • Arugula (to taste)
    • Fresh cilantro (to taste)
    • Olive oil
    • Salt and pepper (to taste)
    • 1 tsp. garlic powder

    Dressing

    • ½ cup hummus
    • ½ cup olive oil
    • Juice of 1 lemon
    • 1 tsp. kosher salt
    • 1 tsp. garlic powder
    • tsp. cumin
    • ¼ tsp. black pepper
  • DIRECTIONS

    Place vegetables on baking sheet lined with baking paper. Season with salt, pepper and garlic powder, drizzle with olive oil and roast in oven on 425 °F until soft but not soggy. 

    Serve cold oven roasted vegetables over arugula with a lot of semi chopped cilantro sprinkled across top and dressing drizzled over.

    Tip: I like to keep the leftover dressing in the fridge to use on various salads or as a dip for raw veggies. The dressing is even better the next day!
