Cod fish tacos

I think everyone loves tacos. Am I right? Tacos are great for both casual family gatherings and dinner parties, because their complexity depends solely on the chef. The beauty of tacos is that they can be made according to personal predilections. You don’t have to worry about everyone liking the filings and sauces, because they are all optional. Moreover, tacos are a visual dish which is engaging and requires assembly work from those involved, meaning fuuun! So, whether you are a healthy eater who prefers lots of veggies and baked and grilled vs. fried or choses a more indulgent experience with fried meats and tons of cheese, tacos will suit both. 

While in the Hamptons, my sister whipped up some healthy cod fish tacos for me and the kiddy gang and they were so delicious, I had to share this recipe. Her secret ingredient? Labneh. Yup, labneh instead of sour cream. You should definitely try it! And make sure to prepare a pitcher of my famous spicy margaritas for a Mexican evening to remember!

  • INGREDIENTS

    • 3 tbsp. extra-virgin olive oil
    • 1 lime (juice and peel)
    • 1 tsp. mild paprika powder
    • 4 cloves of garlic, minced
    • Salt and pepper (to taste)
    • 1 ½ lb. cod
    • 8 tortillas

    Toppings

    • Guacamole (use store bought or homemade, my recipe will be posted shortly)
    • Salsa (use store bought or homemade, my recipe will be posted shortly)
    • Labneh (or sour cream)- Chopped fresh cilantro
  • DIRECTIONS

    In a medium bowl, whisk together oil, lime juice, paprika powder, minced garlic and salt and pepper.

    Add cod, season one side in marinade, flip and season other side and leave to sit coated and covered for at least two hours.

    Barbeque on grill, broil in over or fry in skillet, according to preference.

    Heat soft tacos in a dry pan over low heat.

    Assemble tacos: Spread guacamole and sour cream on warm taco. Add chopped cod, salsa and finally top with squeezed lime and cilantro.

    Tip: If you don’t like fish, substitute the cod for your meat of choice and cilantro for parsley, the taste is amazing both ways.
